Supposedly skinned and boned chicken -cut into half breast sizes.
Nutmeg, paprika, salt and pepper.
Sear the chicken in the hot pan.
Remove chicken, deglaze with wine.
Reduce then pour over chicken and put aside.
A biggish onion and some cloves of garlic.
Fried in the same pan and cooked till golden. Add oil/butter.
Chop up some greens -in this case courgettes. Throw
these in and add more wine. If I had pineapple handy, it
would go in too -adds a sweet dimension and catalyses a
process that creates a syrupy reduction.
I ran out of flat, so used a cheap bottle of bubbles
we had lying around... Throw the chicken back in ready to
garnish...
Mmmmm, bacon. Er, it keeps the moisture in the
chicken... The whole pan goes in the oven at
150oC for 15 minutes...
'Cause it was just me, hash browns... Pasta or some
kind of rice would also be good.
