A seasoning shortcut...

Sear pork, deglaze with white wine, rice wine -whatever, throw in onions to cook a little bit before adding the cocnut milk. I used about half the tin shown above.

Cook a bit then add the tom yum paste.

By now the rice is cooked, so serve it on rice sprinkled with cashews...

This was a bit salty, but quite tasty. I had salted the pork in the beginning -this proved unnecessary given the particular tom yum paste I used.
Add fresh coriander and chopped spring onions at the end -just before serving on the rice.
Bamboo would work going in with the onions.
